I Want My Nachos!!!

Nachos are tasty but not so good for you

Gooey. Salty. Fatty.

But I never eat them. All that gooey cheese, fatty meat, over-the-top salt is just not what I (or anyone really) should be eating, especially when training. It got me thinking. Maybe when I get home I’ll try to make some healthy nachos…

    We use organic blue corn and flax seed chips, black beans, jalapenos and whatever organic salsa (or not disgusting) is on sale. My husband uses a mix of monterey and colby cheese, while I prefer ground turkey breast seasoned with chili powder and cumin.

    Yep…it can be done…however, I wouldn’t do it ALL the time still…there’s only SO much healthy you can put into nachos, lets face it. There are healthier chip options out there…I’ve used some from Trader Joes or even higher end grocery stores…look for organic, natural or blue corn or even whole grain tortilla chips. They’re hard to find, but they’re out there. Then, I’ve used a shredded soy cheese before, but you can always go with a reduced fat, low moisture shredded…just not too much…”healthy nachos” can be 90% cheese. Not gonna happen. Then subsitutue beef (if you want meat on them) for ground turkey, the 99% fat free and the leanest you can find. As for the seasoning, I usually stick to black pepper, and a tiny pinch of sea salt or kosher salt, again, not much…then load up on veggies. Lots of veggies. Nachos are awesome because you can completely customize them. If you’re paying attention to your ingredients, its not too tough to make them as healthy as possible for a once in a while treat.

    A few things that I love on nachos, which are healthy and delish:
    1. Greek yogurt (the plain lowfat variety, instead of sour cream)
    2. Black beans
    3. Jalapenos (spicy!!)
    4. Chopped tomatoes
    5. Chopped avocado (has fat, but good fat!)
    6. Cilantro (LOVE it!)
    7. Lime

    I like warm baked chips (homemade, from 99% fat free corn tortillas) or baked pita chips. Fab!

    I would also add fresh chopped vidallia onions, you can also use any kind of beans or black eyed peas. I take low salt tortillas (corn or whole wheat) and bake them with a little olive oil to make healthier

    I use colby jack cheese, mission chips, homemade salsa with cilantro, one habanero pepper in the salsa, green onion, red onion, new mexico chile powder, roma tomatoes, chopped garlic, and some other ingredients that are a secret. It is really all about the salsa and taking it easy on the cheese. The main reason why I eat nachos is to test out my salsa. I love different salsas with different combinations of seasoning and ingredients.

    try them with salmon sometime,I use low sodium chips too,and lots of tomotoes

    Wow y’all are so awesome! Thanks so much for the great tips. I can’t wait to try some in the kitchen when I get back.

    I have to say I’ve definitely never thought about putting salmon on nachos. I do love some spicy Jalapenos though!

    @Mark I never thought about desert nachos but due to your prompting tried to make some and to my surprise liked them.

    I used low sodium chips and added pineapple, peach, cranberries, seasoned with cayenne pepper and toped with emmenthaler and mozzarella.

    M.E.D. I think the chips are key. Your idea sounds pretty good…especially the fresh fruit.
